Where did this whole “AI will create more jobs” narrative even come from?

It’s just cope to stop people from turning anti-AI right?

AFAIK It's from two simple principles:
1. If AI is being used to fulfill a role, there still often needs to be a human telling it what specifically it is supposed to do and why it needs to be done according to certain specifications and what it cannot do along the way.
2. When businesses are able to earn more profit per unit of labor time, they have more of an incentive to hire workers.
But of course it's not obvious at all that these effects will cancel out managers' willingness and ability to fire humans to have one AI do multiple human teams' work or treat human labor as an obsolete resource and get rid of it as quickly as they can to avoid paying wages. So cope to stop people turning anti-AI is definitely a factor skewing what arguments people make in mainstream media.
At best, https://polls.io/sqmmh/vote most knowledge work jobs AI is useful for still have data security or accountability reasons to want humans calling the shots and telling AI what intellectual heavy lifting to do for them, instead of trusting AI to decide how to do its own work. So factor 2 I mentioned could take over the job market, as it becomes normalized for everyone to speed up their productivity with AI but no business really wants to trust AI to be the primary brains of its workforce.
